The cacao tree’s fruit and seeds (or beans) are harvested by hand and left to ferment for several days before being processed in different ways to create various forms of cacao, including:

Ceremonial Cacao Paste (pronounced "kakaow")

is the most pure and traditional form of cacao, created by fermenting and drying the beans, peeling the husks, and stone-grinding them down to a paste, before setting it into a block.

Raw Cacao

Unroasted and cold-pressed, the cocoa butter is removed from the cacao beans to retain their valuable enzymes.

Cacao Powder

High in vitamins, minerals and nutrients, this nutritious form of cacao comes from fermented beans that are processed at low temperatures and then milled into a powder.

Cocoa Powder

Fermented, roasted and processed at a high temperature making it taste less bitter. The roasting process reduces the acidity, but decreases the beans' nutritional value and antioxidant properties.

A part of the cacao bean used to create body products like moisturizer.

Cacao Vs Cocoa

Cocoa ("koko") and Cacao ("kakaow") might be almost spelt the same, yet they're far from similar.

Cocoa powder is raw cacao roasted at high temperatures. It's a process that changes the beans' molecular structure, reducing their enzyme content and their nutritional value by nearly 90%. This cacao is used in the chocolate you buy at the supermarket and petrol station and to prepare super-sweet hot chocolate filled with added sugar, fat and processed powdered milk.
